February 2009 – Tofu Tacos

1 package extra firm tofu, drained, squeezed & crumbled
·
1 can black beans
·
½ onion diced
·
1 t Cumin
·
1 t Minced Garlic
·
½ t Coriander
·
½ t Cilantro
·
½ t cayenne pepper
·
Salt & Pepper to taste
·
Chili powder to taste
1.
To prepare the tofu
we wrapped it in several layers of paper towels and simply squeezed the liquid
out of it until it was pretty much dry.
Brown in olive oil with onion.
Once browned, leave in pan on just enough temperature to crisp it
without burning.

Add your seasonings, stirring well to allow tofu to absorb
all the flavors. Cook down and
re-crisp.
3.
Add black beans and stir until hot.
Serve with your favorite add-ons! We like sliced olives with grape tomatoes
quartered, freshly grated extra sharp cheddar and piles of shredded romaine
lettuce. Jennette likes plain yogurt
while I of course like sour cream!
