
February 2008 – Crispy Spiced Shrimp
with Angel Hair Pasta
Want to make a delicious dinner for Valentine's Day that won't keep you
in the kitchen all day so you can spend more time with your loved one? Then try
this awesome dish and it will soon be a favorite!
Next month I'll give you another variation to this that will blow
you away!
INGREDIENTS:
- 1 lb easy peel large or jumbo shrimp,
peeled
- 3-4 T cornstarch
- 1/2 - 1 t cayenne powder (or to taste)
- 4 T olive oil
- 1 package angel hair pasta cooked as
per directions
- 1 small can of your favorite mushrooms
- 1 bunch broccoli florets
- parmesan cheese
- salt and pepper to taste
DIRECTIONS:
- Start water for pasta.
- Peel shrimp and put in a plastic bag.
Add cornstarch and cayenne and evenly coat shrimp. Remove shrimp to a
paper plate.
- Add pasta to boiling water
- Put broccoli and mushrooms to a bowl
and microwave for 1 minute.
- Heat 2 T of oil in a non stick pan over
med-high heat.
- Add 1/2 the shrimp in an even layer,
cook till crisp then turn and repeat, remove to paper towels.
- Add 2 T oil and repeat with remaining shrimp
and add to paper towels.
- Drain pasta and put back in pot. Add
1-2 T extra virgin olive oil and mix well.
- Add broccoli and mushrooms and stir.
To serve, dish
pasta to plates, salt pepper to taste and add parmesan cheese. Spoon shrimp
over pasta and enjoy! Start to finish is about 30 minutes and taste like your
favorite restaurant!
